
We use our network of producers to access and secure a great selection of cheeses that only have limited availability in the calendar.
Grazing of animals varies throughout the year, which affects milk flavour, texture & colour. Milking season of rare breed cows, sheep and goats also can influence the availability of milk. Also, the affineur may introduce other local ingredients which are only available seasonally.
All these factors mean there is always a great selection of exotic cheese to choose from, that changes throughout the year.
